Backcountry granola with stewed fruit
This is a quick and delicious breakfast that can be even easier and faster if you use granola that you brought from home.
Serves Two
2 cups water
1 cup dried fruit
1 tablespoon oil or butter
3 cups oats
2 tablespoons honey or maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon cardamom (optional)
1/2 cup shredded coconut
1/2 cup nuts
1/4 cup driend bananas, broken into smaller pieces
In a pot, bring the water to a boil and add the dried fruit. Reduce heat and simmer for 5 minutes. Take off the burner and set aside.
Melt the oil/butter in a pan or fry-bake. Mix the oats, sweetener, cinnamon and cardamom.
Add the oat mixture to the pan and cook on low, stirring consistently until lightly browned. Take off heat and put the fruit mixture back on.
In the meantime, add the coconut, nuts and dried banana chips to the granola.
Once the fruit mixture is thick and syrupy take it off the burner.
Pour some fruit mixture on top of a bowl of the granola. Top with coconut and dried bananas.
