Eggels (scrambled eggs on a bagel with cheese, avocado and tomato)
This is a great recipe to make on the first or second morning of your trip. It will be sure to keep you going for a while on your hike.
Serves 2
Ingredients:
- pre-scrambled eggs
- Oil/butter
- 2 bagels
- 4 slices of cheese
- 1 avocado (optional)
- 1 tomato (optional)
Field Directions:
Heat up the pre-scrambled eggs and set aside.
Heat up the oil/butter in a pan and brown the bagels face-down.
Flip the bagels and distribute the eggs onto one side of each bagel. Put the cheese slices on top of the eggs, put a drop of water in the pan and cover so the cheese melts from the steam.
Place the other half of the bagel on top and serve with slices of tomato and avocado (optional).
